What do you do with your Easter eggs after Easter?
When I was growing up, we always had potato salad for Easter Dinner. Except the time we three girls ate all the hardboiled eggs before our parents got out of bed. Unfortunately Phil can't stand hardboiled eggs. So, tonight I made myself an egg salad sandwich for dinner. Phil was not home. It was very very yummy. What do you do with your hard boiled eggs?

I have no reason to make pretty Easter eggs - as much fun as that would be. However, I definitely get a hankering for egg salad sandwiches at this time of year! Yum! I had some delicious deviled eggs recently with bacon in them. Double yum!
